Certified quality
The balsamic vinegar of Modena has been awarded PGI status ((Protected Geographical Indication, Reg N. 583/2009) on 3rd July by the European Union. In order to keep his PGI status, the Balsamic Vinegar of Modena must be produced and matured exclusively in the territories of Modena and Reggio Emilia. Its production requires the use of grapes from only 7 typical varieties of Emilia Romagna , the only ones that can give the product its characteristic sweet and sour taste: Lambrusco, Sangiovese, Trebbiano, Albana, Fortana and Montuni.
By law the Balsamic Vinegar of Modena PGI must be aged in precious wooden barrels for a minimum of 60 days, while the same can boast the word ‘INVECCHIATO’ (aged), only after spending over 3 years in precious wooden barrels.
After the Balsamic Vinegar of Modena was awarded Protected Geographical Indication (PGI), several additional controls were introduced for both the raw materials used according to new law parameters and the finished product. The Certification body appointed by the Ministry for such checks is called CSQA. This is to ensure constant and rigorous quality and integrity of the Balsamic Vinegar of Modena.

Aceto Balsamico di Modena PGBELL SILVER Balsamic Vinegar of Modena PGI , has a sweet and sour well-balanced taste, it is a low - medium density vinegar. It is aged in oak barrels. It is used to flavour pasta dishes and grilled fish.
BELL GOLD
Balsamic Vinegar of Modena PGI represents the quality of our most aged vinegar. Aged for years in oak barrels, it is distinguished by its high density, it has the typical barrique well-balanced and harmonious aroma and a sweet flavour with a slight acidity. This aged vinegar is recommended for grilled meat, boiled vegetables, Parmesan cheese, vanilla ice cream or as condiment for strawberries
BELL BRONZE
Aceto Balsamico di Modena PGIBELL BRONZE Balsamic Vinegar of Modena GPI has a sour and fruity taste, it is a low density vinegar. It is aged in oak barrels. It is used to flavour salads and grilled vegetables.
HERALDRY SILVER
Balsamic Vinegar of Modena is our young product.
It has a distinctive and penetrating aroma with harmonious acidity and sweet and sour flavour. Well balanced, fruity and velvety. It is suitable for dressing salads and vegetables in general.
These glazes represent Italy with its alpine and Mediterranean flavours. They deliciously meet crustaceans, duck and red meat, vegetables, salads, fruit, fruit tarts and ice-cream.
COOLMIX
Three plain glazes, one perfect density to decorate fish and red meat, raw and cooked vegetables, strawberries. Delicious with French fries and surprising over pizza with bacon and Parmigiano Reggiano cheese.
